Butternut squash is much more common than at any time. Butternut Squash Soup with Poblano Chili Peppers
Ingredients:
1 tablespoon Vegetable or Canola Oil
1 smaller White Onion, chopped
1 teaspoon chopped Fresh Garlic
2 Roasted Poblano Chili Peppers, peeled, seeded and chopped
1 teaspoon Ground Cumin
2 cups cooked Butternut Squash (about 1 small), peeled
3 cups Chicken Stock
1 teaspoon Coarse Salt
1/2 teaspoon White Pepper
chopped Fresh Cilantro
Preparation:
1. Preheat the oven to 400 F.
